Chia seeds are incredible! If you're looking to switch up your breakfasts for the summer, give chia pudding a try. It's a perfect option for the hot summer months (and also great as a snack/dessert). Simply prep the night before work, and grab and go in the morning.
Chia seeds are packed with nutrition: they're full of omega-3's, rich in fiber, and will keep you energized all morning. Here is the recipe for a basic chia pudding, but you can add in whatever you'd like to keep it interesting. Try adding in cocoa powder, nuts/seeds, bananas or fresh berries, or shredded coconut.
Chia seed pudding (makes 2 servings)
3 tbsp chia seeds
1 cup milk of choice
1/2 tsp vanilla extract
pinch of salt
1 tsp maple syrup (can use stevia/other sweetener of choice/or omit)
Stir everything together in a mason jar or container and let it sit in the fridge overnight or for at least 1 hour. Add in your desired toppings before digging in. Let us know if you try it below!
