Asian-Inspired Salad with Sesame Ginger Dressing
Eat the rainbow with this colourful salad, packed with fiber and bright veggies including shredded carrots, purple cabbage, crunchy edamame, fresh mint and tossed with a zesty sesame ginger dressing. This is a perfect light lunch or a fresh take on dinner.
*Serves 4
Salad ingredients:Â
2 heads of romaine lettuce , choppedÂ
2 large carrots, shreddedÂ
1/2 small purple cabbage, shreddedÂ
4Â scallions, choppedÂ
1 cup edamame (not in the shell)
Toppings:
1/4 cup chopped roasted almonds or peanutsÂ
2 handfuls fresh mintÂ
Protein of choice (ie. tofu, chicken, steak, salmon)
Dressing ingredients:
8 tbsp sesame oilÂ
8 tbsp rice wine vinegar
4 tsp maple syrupÂ
1 inch shredded gingerÂ
4 tbsp nut or seed butter ( I like peanut)
2 tbsp lime juiceÂ
1 clove chopped garlicÂ
How-to:
Assemble salad ingredients and place into a large bowl.Â
Add in your protein of choice and the dressing, top with fresh mint and the almonds/peanuts, and a squeeze of lime.Â
*If you're packing this for work, place your protein at the bottom of your container and the salad ingredients on top to prevent everything from getting soggy. Store the dressing in a small container and add on right before you eat.Â
